Chef Kelly is in French Caledonia. The young commis chef Manate takes Chef Kelly to meet with Maheata to discover the traditional recipe of the "Paua'a." For her revisit, Chef Kelly goes with Maheata at the Papeete market to see a fishmonger, and then meets with Glen, a coconut producer in Tautira on the Tahiti peninsula.
